These chocolate topped granola bars are seriously the most delicious and easiest treat. I make a batch of something granola-ish, usually on Sundays, if it’s a get-your-life-together kind of day, which Sunday is good for. By Friday it can get a little ugly around here, but you give me a weekend and I’m shiny and new and back at it.
I like to add this snack to my meal prepping for the week since I’m already in the kitchen anyway . My kids fuss like crazy when I make them plain oatmeal for breakfast, but when I make baked oatmeal bars, oatmeal breakfast cookies, granola bars, and recently granola cereal, the tune changes. These granola bars are the easiest though and my go-to when time is short. Four ingredients, no bake, and the kids gobble them up like they are candy bars. What more could you ask for? The original recipe doesn’t use chocolate, and they are good without, too. What can I say – we like chocolate in this house. We like candy bars, too.
After mixing the honey and peanut butter over medium heat, combine with the oats and press into a small, parchment-lined pan. I like to melt some chocolate and spread it over the top, but a friend of mine just mixes them into the oats and that’s delish, too (Only uses one pan that way. Score!) Pop them in the fridge for a while to chill and set. After about an hour, I cut them into small squares. They are perfect tucked into lunch boxes for a little sweet, whole food treat after lunch. Who am I kidding? The kids eat these bad boys first before their vegetables and sandwiches, but then again so do I. Oops.
